Vanilla Kefir Chia Pudding
Remember chia pets? Well who knew that the seeds used to grow them are actually quite nutritious, delicious and versatile. Chia seeds are a great source of fibre and omega 3 fatty acids.
Kefir is a fermented milk drink. The flavour is similar to yogurt but it has a much more runny texture. It is also higher in probiotics than yogurt. One day I had the brainwave to mix chia seeds and kefir together, the result was quite spectacular.
Chia pudding could be one of the easiest things you ever make. The texture is quite similar to tapioca pudding. I mix the ingredients in a small mason jar before bed and enjoy for breakfast most mornings. Eat it on its own or top with some fruit and homemade granola.
Takes 1 minute to make
3/4 cup plain kefir (non-efferecent)
1/4 tsp vanilla extract
2 tsp maple syrup or sweeter of choice
1 tbsp chia seeds
1. Place all ingredients in jar or bowl and mix well
2. Place in fridge and let sit for one hour until thick.
